【枝竹牛腩煲】是一道傳統的客家菜,枝竹即「腐竹」,因像竹一樣,所以也稱為「枝竹」。牛腩是帶有牛筋的牛肉,肉質細嫩、軟嫩不柴、肉汁濃厚。枝竹和牛腩一起燜煮,枝竹吸收到牛腩的香味後,味道更加的香韌,二者的葷素搭配也不會過於油膩,口感適配。用餐時,挖幾勺煲湯汁攪著米飯拌一下,湯汁的鮮香融入米飯,在寒冷的冬季真是無以言喻的享受。
